HI, I am in a similar situation, on Youth Mobility currently in the UK, about to fly back to Australia to apply for ancestor visa, firstly is there any problem that my Youth Mobility won't have yet expired, I am applying in July, my current visa expires in August, my assumption is it would just replace, but would like clarification.

Is it true the Certified copies of the original certificate, by a JP or commissioner for declarations in Australia can't be used?

Finally, When I leave the UK do I need to make sure I get my passport stamped?

#1 Any new visa you get will replace your existing one, such as Tier 5 YMS.
#2 You should supply original documents whenever possible. If you don't have originals, you have to explain why and may be able to submit certified copy, but acceptance is at UKVI's discretion. Birth or marriage certificate, certified by registrar etc, can be used.
#3 No passport is stamped, so not needed.
