Hi

For New Zealand under SMC category - If my present organization and past organizations do not issue the letter with details about my roles/responsibilities, hours of work per week then what other documents can I submit as my proof of employment, as an alternative.

Will salary slips (or tax receipts), offer letter and experience letter will be sufficient?

All you can do is provide as much evidence as possible. If salary slips, tax receipts, offer letter and experience letter is all you have then that is what you need to provide. You could also ask a manager (current and previous) or a senior colleague to provide a sworn affidavit.
There is no guarantee that Immigration will accept these things but all you can do is your best no matter how difficult it may be. Whether Immigration accept it will be at the discretion of your case officer.
