Having read a couple of posts today regarding valid from dates of visas I was just wondering when the the valid from date starts from and when that means somebody can enter the country.

For instance does it start on the date the visa is added to the passport or not? The only reason I'm confused is that my wife stated a likely return flight date of November 12th but now it's looking as though we may be able to book a much earlier flight to the UK.

Will her visa start on the 12th and if so can she enter the UK prior to that date?

If they honour her requested date of 12 November then that will be the valid from date and she can't enter the UK on the spouse visa until then. That being said, they don't always honour the requested date and the valid from date may be the date of issue in which case she can travel at any time.
