Re the dogs - in what respect?

You have their passports I presume.

First thought is that they may find it too hot - can you get them clipped?

My poor old GSD has to suffer me & the clippers, then a cold hose-pipe every morning to get him through July....

I had a loving but nervous Rhodesian Ridge back which went back and for with me in 2004 - 2010.

In the ferries dogs stay in the car. Consider tranquillizer for the journey - strangers around the car, ship movements, noise etc are v frightening. Vet gave me suitable pills,v effective.

For the shuttle the dog stays in the car with you, but you can't always open the boot because the cars are packed in tightly. Perhaps a tranquillizer?

Other points....dogs must be chipped in France. Lots of peepee stops before and after the channel crossing to prepare/recover from the channel crossing.

The use of ca-ca bags is obligatory in many French towns.

FWIW my dog found that French rabbits run faster than those in the UK - or was it age?
