The local markets are generally organized by the mairies (the town halls). Check with the mairie in the towns where you would like to sell your produce. They should be able to tell you what trader licenses or other forms of registration they will require to allow you to sell in the local market. (Selling any sort of food stuffs normally requires very specific registrations, possibly through the farming associations, but in any event, you will need to be properly registered for VAT and cotisations/social insurances.)
