Hi, having moved to France I seem to have lots and lots of forms to fill out.
Many of them ask "Profession"

I have been a stay at home mum for the past 3 years, but my background is a masters in Archaeology. Can I write that I am an archaeologist?

Normally, when they ask for your profession in France, they want to know what you're trained to do - whether or not you are currently employed. (It's considered part of your identity.) Archaeologist is as good a profession as any! You earned it, now use it.
