I am yet to have a telephone interview for a job based in Belfast and possible few hours in Dublin. Is there so sort permit I could get a spouse of a British national to do a few hours in Dublin? Just need to be sure to say when asked about this.

No. Republic of Ireland is a separate country and you need to meet their requirements for visa, work permit etc.

Working in Ireland is tempting because there is no routine border control and you can just hop on a train or bus to Dublin. But this doesn't mean it's legal to work without Irish visa or permit, and they do conduct immigration raids to catch illegals.
