So we're almost at the end...save for the affidavit of support form (I-864) which we're still awaiting from my sponsor to be in the US.

My question is, how long does it take to get an interview after you say you're ready for it? Is it worth declaring readiness now, and hope the I-864 will arrive before the date is set?

What are other people's experiences in the time it takes between 'Notification of Applicant Readiness' and attending the interview?

Thank you.

Depending where you are etc there will be different wait times due to how busy they are. Chase up the support form first.
When I had everything ready, I started chasing, e-mailing the relevant offices saying I had a leave date arranged and would appreciate the earliest appointment. (It was tru for me at the time and it worked).
