There are exchange bureax all over the city, including at the airport when you land. I doubt you can pay in USD or Euros, as the loacl currency is UAE Dirhams. Credit cards will be accepted.
Ther a re losts of places pt go near where you are staying. You'll see other hotels and there are loads of cafes and restuarants on the street, at DIFC and at Dubai Mall which is very close.
You can walk in certain areas. Depends what you want to see. It's a big town, very spread out, and you will need taxis to get about.
