I hope this isn't an overly stupid question, but once we have a National Insurance Number, are we able to go to the doctor with that, or because we are in the UK on a visa do we need to get private health insurance?

What kind of visa are you on?

A National Insurance number is like a social security number and has nothing to do with health care.

Find a GP (you can search on the NHS website, and google will also find them for you) and register.

If the have a system of appointments by internet make sure you sign up straight away, where they have it is a real time saver.

Also make sure to check the terms of your or your partner's employment, your company may very well be providing private health insurance, which is invaluable if you need things done quickly.
