while granting visa do they look at your bank statements just as a proof of income or do they also consider it for assets? Reason I ask is because, my salary account gets continuously drained as I make investments on a monthly basis.

To get statements of those investments would take time. Mere bank statements would show all the records but not much wealth in it.

Would that make any impact on the decision?

No, they don't. For the skills assessment they will want to see proof that you've been paid - pay slips, tax forms etc. - but for the actual visa application, they don't care about your assets etc.
