Which documents should I provide to prove that my mother passes balance of family test?
(except ration card)

First and foremost document would be the birth certificates of all the children.
Then a PR visa copy/Australian Citizenship certificate for number of children in Australia who count towards BOF.
An attested notarized affidavit from the Parent declaring details of all children and their current permanent residency/address.

Apart from all this, during the verification stage, Department of Home Affairs also requests the relevant mission to ascertain the number of children born to (persons) and they can check other records (for example, children of a previous relationship or under declaring non-eligible children) if they have concerns.

I think the declaration that you made giving details of your siblings when applying for Pr should suffice
India doesn’t have any family register, so I don’t think you can provide any evidence as such
