We purchased a parcel of land a few years ago and had a geometric survey done at the time. Our neighbour has now moved his fence onto our land. Can we just simply move it back or do we need to send a legal letter informing him of our intenitions and give him a date so that he can make amends?

It's your land, do what you like with his fence.

However, do it quickly, and as to how - well, that'll be obviously influenced by how you want the relationship. All your options are open, from sending a copy of the relevant part of your plan cadastre as proof, to just uprooting the fence without notification.

The land is yours and the fence is his.
So removing might be touching his property, depending on the interpretation a judge would make. Don't do it before checking the cadastre (geometers can be wrong - personal experience), taking pictures, and verifying that removing the fence would not pose a threat to whatever is behind (kids, animals etc). You would be held responsible if something happens to his cat or if his dog bite somebody because they were loose on the street following the hardy removal of the fence. If there is a problem, you probably will have to go through the constat d'huissier and then the court.
