Impossible to say with any degree of accuracy. Nobody has a crystal ball to know which route of study could lead to a job and eventually RV then PR.
Occupations that are in skill shortage now may not be in a years time and may have been taken off the LTSSL all together as times change.
Maybe you should research if you can actually study all those different courses in Wellington and if you are eligible to apply.
Have a look on Jobs on SEEK - New Zealand's no.1 Employment, Career and Recruitment site for current vacancies to get an idea if any of the study courses could lead to work, what that work may be, where it could be situated and the pay.

If you are considering skilled migrant category and a resident visa application you already have the Level 7 Bachelors which may afford you up to 25 bonus points assuming it is recognized or assessed as Level 7. You will of course have to claim for an occupation off the LTSSL with that degree and a minimum of 3 years post qualification experience.
If you go for Post Grad in another area of study - irrespective that it may give you Level 7 it is not a Bachelors degree and as such does not meet the requirements of an occupation off the LTSSL so you may not be able to claim the bonus points, and you would still need to have sufficient post qualification experience so may take many years to get RV and then PR.

EOI submitted Jan 2010. ITA Jan 2010. ITA submitted Apr 2010. RV approved June 2011. Passports stickered and back to us Aug 2011. Secured job Dec 2011. Arrived Mar 2012. PRV Mar eligible for citizenship but at $1175 Yeah but Nah!!!
