Moving to Bulgaria

Hey. Anyone here have experience of living in Bulgaria. I am considering moving there. I have means to live in any country within Europe as my job allows me to work from home. I have been there many times and found people i cities speak English so I would move to a city like Sofia. I wanted to know if it was essential for me to go through all the motions of paperwork or if I can do what I did in GReece and pretend to be on holiday a lot there (holiday home). I avoided registering myself and all i had was a local tax number.
Also I have an English plated car. Like in greece you have to put GReek plates on after 6 months but I ignored this for 3 years and never got stopped or had a problem. Several other expats did the same. What I am asking is, can I get away with that sort of living in Bulgaria?
