Talking Italian Flag Pasta

I'm definitely up for recipe sharing! Here's an easy, fresh, impressive, and delicious pasta recipe that I make all the time:

Pasta alla Bandiera d’Italia

serves 4

6 oz. ricotta salata
1 small box of grape tomatoes
1 bunch fresh basil leaves (i.e. one package found at Whole Foods or other grocery stores)
1 lb. penne or mini penne pasta
lots of olive oil

1. Put the pasta water on to boil. Once it has reached a boil, add enough salt to the water so that it tastes like the sea, then return it to a boil. Add the pasta, give it a swirl, cover and return it to a boil, removing cover when boil has returned. Cook until al dente.
2. While the water is heating, grate the ricotta salata into a bowl/dish, and set aside. Slice each grape tomato in half lengthwise, and set aside. Pluck, clean, pat dry, and chop the basil leaves, and set aside.
3. To drain the pasta, place the colander in the pasta serving bowl in the sink, this way the hot pasta water will spill through and heat the serving bowl. Discard the pasta water, and pour the drained pasta into the heated serving bowl. Immediately throw the grated ricotta on top and drizzle in a good amount of olive oil while tossing to incorporate and melt the cheese. Add the tomatoes and basil, and more olive oil if the pasta looks dry. Toss to combine. Enjoy immediately.
