Default Biometrics and Mailing Off Application Packet

Hello! I have a visa question and was hoping you could help me and my fiance. My fiance (the sponsor) and I (the applicant) are applying for a fiance visa. I took my biometrics last Tuesday (September 27th). On the appointment confirmation sheet, it reads that the application, supporting documents, etc. "should be mailed to the visa issuing office shown below within TWO weeks of having you biometrics taken."
Does this mean that we the application and documents have to arrive at the visa issuing office within two weeks, or that we just have to put it in the post. (This is extremely important to us since my fiance just mailed me his employment contract, and it will not arrive for 4 - 7 business days.) If it just means that we have to put it in the post, is it okay to post it next Tuesday, exactly two weeks since the biometrics have been taken, since it reads "within" two weeks? And if the contract does not arrive it time, would it be okay to mail a photocopy of the contract instead of the actual contract itself?

To edit this: Also, my fiance's salary slips and P60 are already included. In light of this, how important is the actual employment contract? Could we mail a photocopy of it?

Make sure your package, with your supporting documents, paper copy of your application, biometrics receipt sheet and original US passport reaches NY consulate within 14 days, even though technically you only need to sent it off within that timescale. If you are paying extra for priority, the receipt with serial number has to be on the top of the pile, with priority written in red on the outside of package. Also package has to be sent on the same day you pay for priority.

Since you already have pay slips and P60, just send them. Contract is less important, and it's not even specified as one of required documents.

Thank you so much Joppa!!! We appreciate your time and help immensely!!! I now have another question..we have quite a big packet to send off...its mostly my bank statements from the last six months that make up the bulk of the package, but it's probably about 60 pages, and that's not including photocopies. I don't want to send too much, and I have taken pains to organize and label our material. Do you think we should cut down on what we are sending? (I can't imagine how though)

Not knowing what is in your package, it's hard to advise, but provided it's neatly arranged with no obvious duplication, just send it as it is and let UKBA decide what is relevant.
