Oh that's good, yes definitely should include all that. Thanks for the heads up!

So would the photocopy of his bio page from his passport suffice as proof of nationality? Or do I need something else? He is coming for a visit in a couple weeks and I might as well get it done while he's here and ask him to bring the documents with him.

Also, if someone could tell me whether I should send some proof of my husband's enrolment in his PGCE course? Would that be needed and/or would it help?

I think the less you mention your husband, the better. Remember you are applying for what used to be called working holidaymaker visa, so your main focus must be on work and holiday, and being with your husband is incidental/fortuitous.

Thank you so much for your help!

The one year or year and a half period and being away from each other isn't so bad considering we have spent 3 years in a long distance relationship and at least now we can visit each other more often because we're married. So we are only away from each other a few months at a time. I had initially planned on using this time to gain extra qualifications in Canada with short courses and gaining work experience. However, when I learned about the YMS, just a couple weeks ago actually, I thought if I can spend that time in UK and gain qualifications and work experience in the country I actually want to be in permanently, that's probably the better option out of the two. I would get the time to sort through my career options based on the job market in the UK and settle into a field that I enjoy and am more comfortable with.

Future UK employers would focus more on UK work experience compared to Canadian work experience, right? Correct me if I'm wrong in thinking that.

Just an update for anyone in a similar situation:

I applied on the 10th of August, did biometrics and sent documents off on the 14th, they were recieved by New York office on the 15th and just got an email now saying I got my visa on the 17th. I'll be picking up my documents next week. Good luck to anyone in the same situation!
