Default Type of visas/ demands list

Hi can anyone help?
We have just been to an emigration show in Surrey and have learnt alot about the different types of visas in order for is to apply for residency in Oz.
We have already kind of stumbled across a problem, mine or my partners jobs arenot on the high demands list, although I did score enough scores to begin to apply for certain types of visas.
They were the 176 state skilled sponsored visa or the regional sponsored visa.

Please does anyone have or know any information to help us decide which is best? We are willing to opt for the Regional visa but are not sure how to go about this process.

Also I am a primary school teacher and was told that my job could be on some of the states demands list, does anyone know where I may find the individual states demands list.

Hope you can help we are really keen to start applying and getting the hell out of the UK.

This website actually explains the conditions of the visas which may help you to decide which one to go for.
