does it matter what country a person is from as i am iris and my wife is south african, as in can a case officer hold a grudge???

No it doesn't. There are alot of checks within DIAC and if any of that sort of thing happened I'm sure the CO in question would be brought up on some fairly serious charges (discrimination and/or dismissal). COs go by your documentation and assessment against concrete rules of Immigration.
