You may ask for an exception from your professor to have you do something else and ask for an extra credit. Is this thing you're doing, for an extra credit? If not, and no exceptions are granted, you and your classmates in this similar situation (everyone?) could submit a written complaint to someone in your university. Check the university's complaint channel or onbudsmen/women.

It is not logical/odd for a university like Regis to do that to you. (well, myself after just checking them up). If you're really serious, "print this out and call it, your assignment and have your professor or whoever that grades you read it". "Ask them, what are the odds of you accomplishing that & go from there if you get a reasonable answer".

If you did get someone interviewed in the end with quality answers, "consider yourself to having won the Megamillions Jackpot". Hope, you'd find the winning ticket.
