Welcome to the forum.
With regard to your partner, you will have to prove that you have been together for at least 12 months at the time of the application.
Here's an earlier thread (on a 457 visa) but the requirements for proving the relationship are the same:

I'd recommend asking the advice of a migration agent. They will be able to advise on which job title to apply under. Their first consultation is usually free, without obligation (there are 2 agents who post on here (Alan Collett and Liana Allen)...you could ask them).
