These are normally covered by Industrial relations awards, please take a look at this link:

Restaurant Employees - NSW Industrial Relations

As restaurants open different times (some are dinner only, some close after lunch) there is no set timetable for daily hours that covers the whole industry.

Also you do have to pay taxes on all pay received (does not matter if it's overtime). The award also covers what pay you get for overtime or holidays, etc.
