Hi Mette,
Most people go for one or the other in my experience on the forum.
The skilled independent visa gives you more flexibility to live where you want you and to do anything you want to.
The sponsored visa ensures you have a job but you have to live in the are of sponsorship and obviously do that job for a set number of years.
People can certainly apply for permanent visas after being sponsored. If you check out the "Please read..." post there are links to the visa types and on the website it goes through what visa you can apply for once you are in Oz.
