If you are looking at a skilled visa then you won't be able to get a job in Oz until the visa is approved. I guess for interviewing they also want you resident here but when I looked years ago the visa was more important than being resident.
There are also sponsorship visas (sponsorship by employers that is). I don't know much about that way in but there is a skills matching database and also

depending on where you want to live.
Some immigration agents may also find jobs is you are considering using their services.
