Welcome to the forum.
Have you looked at the different types of visa available? There is a link in the "Please read.." post that goes to the government visa website. That post alos has links for jobs, weather etc.
Certainly if you are looking at the skilled visas then you do not want to change job before applying and being approved for a visa. They do look at how long you've been doing that skill and will want client or employer references. If you can get a skilled independent visa then once you get to Australia you can do what you want but you need to check the terms of the visa since it was years ago when we applied.
If you want to go to Perth or Melbourne then I don't think that a regional visa will work since I don't think that those areas are covered.
